BrewBike expands to brick-and-mortar shop in Annenberg Hall.

In the two years since School of Education and Social Policy junior Lucas Philips started BrewBike, his dream of bringing cold brew coffee to campus has materialized into a full-on coffee business with two retail locations. BrewBike’s initial plan was to serve coffee from a bicycle, which baristas would pedal around the Evanston campus. It now also operates from a brick-and-mortar shop in Annenberg Hall, serving coffee, tea and baked goods from Bennison’s Bakery and Great Harvest Bread Co. Philips reports that daily sales this fall quarter have grown substantially compared to last fall’s daily average, and BrewBike now employs 31 paid baristas, brewers and leadership team members.
